Ole! Quick and Healthy Chicken Tostadas

Hello all!

One of the things that I know everyone struggles with, is finding healthy meals to make when you are in a bind for time, or just simply don't feel like slaving over a hot stove for an hour to make yourself, or family, a fun meal. This is where my Chicken Tostadas come in...

Let's get to making these bad boys!


Healthy Chicken Tostadas

Ingredients:
2 yellow corn tortillas (I love the La Tortilla Factory Hand Made)
1 cup cooked chicken breast or rotisserie chicken, divided
1/4 cup sliced red onion, divided
1/4 cup low fat mozzarella cheese, divided
1/3 cup salsa or a chunky spaghetti sauce (I used Organic Sockarooni by Newman's Own)
1 tsp crushed red pepper flakes
1 tbsp mexican crema or sour cream
2 tbsp of fresh cilantro leaves

**NOTE: All of these measurements can be doubled or tripled dependent upon how many people you are cooking these for.
Directions:
Turn oven setting to BROIL and place the tortillas on a broiler pan. Place in oven until you notice the edges turning up, and the center starting to bubble and lift off of the pan. DO NOT take out before you notice the center getting crispy or else the sauce will make the center soggy.Take out and place half of the salsa on each of the tortillas. Cover each with divided cheese first, then chicken, and lastly onions. Sprinkle red pepper flakes on both, more or less depending on desired spice level. 


Place back into oven and broil until you see the onions softening and the cheese is melty and bubbly. Remove and place cilantro leaves on top along with crema or sour cream. Serve with a small side of brown rice and some fruit for a complete meal!
